A mate of mine who lives in Utrecht just sent me this:
Mastercard to replace Maestro debit cards in the Netherlands in 2023
Should mean that over this year, the previous issues with non-acceptance of Visa and Mastercard debit/credit cards in many places will no longer be a thing. Full switch over might not be complete by May (aim is by the end of July 23) so have some cash back-up... just in case (plus when travelling, you need some change to use the toilets in some of the stations.)

I'll vote for staying on resort at Efteling. The fact that you get 2-day park tickets for all overnight guests makes it a surprisingly affordable option. They're kept to an excellent standard as well (we stayed in Bosrijk last year but I'd expect Loonsche and the Efteling hotel to be just as pristine.
