Essential European Parks

If you like Efteling you’ll probably like Tripsdrill. They’re similar in terms of theming (I mean Efteling is better but in terms of the fantasy aesthetic). Headliners are Mammut, Karacho and Hals-über-Kopf - very comical wooden coaster, launched Gerst Infinity and Vekoma STC respectively.

Energylandia - when you get to that point it’s worth doing Legendia as well. Probably not worth it on its own but in conjunction with Energylandia it’s worth it for (arguably) the best Vekoma ever made. And no queues, ever.

Thinking - depending on your definition of Europe you’ve got Land of Legends as well. Big Mack Hyper and big Intamin water coaster alongside a bunch of other stuff plus water park. Don’t know what the reviews are like though.

Turkey is a bit far for us but will check it out of interest!
 
I suppose it depends how you approach a trip. I always look to add a couple of decent things, then plan the route between to pick up more parks. Some of the smaller and less known about parks (Schwaben or Steinwasen) or something added last minute (Mt. Olympus, Little Americkka were planned the day before) have produced some nice surprises.
