Should adult theme park enthusiasts ride children's IP themed rides and rollercoasters or not?
There are a few kids area I do frequently go into, Thomas Land which Thomas is an IP that I still love as the IP was originally intended for both Adults and Children when it was Railway Series the area has great atmosphere and has the insanely fun Troublesome Trucks. Has a great deal of nostalgia.
And Nickelodeon Land for Nick Streak and other rides.
Cbeebies Land to for nostalgia as most of that land was just repainted Old Macdonald's Farmyard as well as IP being relatable.
So absolutely people should be able to ride what they like as long as they meet within the height restrictions and other limitations. The Bluey Coaster debate stems mostly from creators who dislike Alton Towers and never visit the park

I remember going on the kids' drop tower at Drayton Manor - simply because I missed Apocalypse, and it was the closest thing they had to it (*sobs*)
