I have had this scenario on Oblivion where I was told that they couldn’t let the ride go with one person and they needed to wait for at least one more.

Have you contacted your GP and asked if you can get some form of medical exemption? If not, I believe the requirement is face coverings, so may be a bandanna or something it little looser would be more your thing?
I started meditating with a face covering and got used to breathing through it better and keeping calm. If you haven't tried it, it may be worth a go. Good luck!

Risk assessments are ongoing processes, subject to alteration due to events, and individual to each ride.
In the current circumstances, rules will change over time.
You can't expect guest services staff to go into detail about individual ride risk assessments, especially when they are subject to constant change.
