Legoland Windsor
Not theme park related, but we went to the Lego store in Copenhagen in the summer and I must say we were quite underwhelmed by it. It isn't that big (pretty sure the one at Legoland Windsor is bigger), was way too busy and way to expensive. Maybe it is because we aren't really that into Lego but we wouldn't be rushing to go back (just our opinion of course).

It's not really surprising when they aren't targeted at you. Even the LEGO House is more focused on build activities for kids (although I dare say you'd find the top floor (where they display the AFOL models) and the basement (the archive section) quite interesting.
However Diogo if that's a challenge I'd happily sit and discuss Miniland with you all day and I'd be surprised if you find nothing of it interesting
