“Epic Ride: The Story of Universal Theme Parks” is now streaming on Peacock if you have that service (probably via VPN) and popping up elsewhere.
It's a three part series about the construction of Epic Universe but also uses this as a stepping off point to look back at the history of Universal as a movie studio and theme park operator.
Watched episode one (about an hour long) and its been good so far.

The BBC Radio History program Witness History have done an episode about Dismaland on its tenth anniversary including interviews with staff
For those who aren't aware, Dismaland was a temporary exhibition by Banksy in Weston-super-Mare which was a dystopic satire on theme park resorts (Banksy described it as a bemusement park)

Not a TV show per say, but the British YouTube channel, The Rest Is History recently had a tour of the Walt Disney Studios, Walts Office complex and exclusive after hours access to Disneyland riding the rides and attractions with non other than the man himself, Bob Iger
