It all gets chucked in one roasting pan and in the oven. Potatoes, carrots, and diced chicken covered in balsamic vinegar and honey. Then some mushrooms in near the end. Simple and awesome!![]()
Setup an extra plate please

Today, I decided to try and make some homemade burgers. I made the recipe myself, it was incredibly easy to do and tasted wonderful! Here's what you need to make two burgers:
250g steak mince
1 egg yolk
1/2 slice bread, made into breadcrumbs
1 tsp cumin
1 tsp oregano
1tsp paprika
To make the burgers, simply combine all the above ingredients! To make sure they hold, press the mixture together for a few minutes, then shape into two patties. Then, put them in the fridge for at least an hour to help them set.
To cook, just get a griddle pan and heat some oil. Place the burger on and cook for 12-15 minutes. Flip no more than three times. Then just serve with whatever you like on your burger - I had a slice of Applewood cheese and some ketchup. It was lovely.

It being Sunday, I made myself a roast for one, with half a small chicken, roast potatoes and sage and onion stuffing. For the chicken, I roasted it with red onion, garlic, butter, sage and thyme for 55 minutes. The potatoes were my own recipe - boil them for 20 minutes, fluff them up and let them rest for five. Meanwhile, melt some butter in a frying pan and add garlic. Add the potatoes to the pan, coat them in the garlic butter, then put onto a baking tray and roast for 40 minutes. Absolutely perfect potatoes - fluffy on the inside, crunchy on the outside, with a lovely hint of garlic.
As for the stuffing...I just used a box mixture. Because sometimes I'm allowed to be lazy.

That just sounds so good, I wish sometimes I could just be bothered to cook something half good.

I was hoping to make one of my specialties tonight - caramel pork with egg fried rice. Unfortunately I have no oyster sauce and don't wanna venture out again, so I'm having a pasta bake using my own tomato sauce, baking in the oven for around 20 minutes and topping with mozzarella cheese.

Today, I made two things from scratch
Firstly, I baked my first ever thing: lemon cupcakes. The mixture was incredibly easy to make, and tasted lovely. The icing wasn't brilliant however, and I think the recipe missed out on a few things to make it better.
For dinner, I made my patented caramel pork and had it with egg fried rice. Everyone whose tried it loves it! It's so simple to make, too!
Start by frying some garlic, then add pork and fry for a few minutes. Then, add 4 tablespoons of sugar (preferably brown), with a tablespoon each of soy sauce, fish sauce and oyster sauce. Fry for a further ten minutes, so the sauce becomes all thick and caramelised. Serve with noodles or egg fried rice.

Carla made some M&M cookies the other day, they are lovely which is why there is no photographic evidence of them
I have just made some bread dough and I am making focaccia to go with tea tonight, which will be fried chicken with mushrooms then some tomato and mascapone sauce with spaghetti. Really simple but lovely.

Here are a couple of things I have made over the last couple of days.
Firstly Focaccia
Tonight I made pizza. I have got good at doing pizza dough but every so often it does not work the same as usual. This time the dough was a bit wet and sticky, it proved ok but was hard to stretch out to the size of the pizza but finally got it there. It proved again and turned out to be a really nice pizza base.

This is my latest creation:
Home made falafel burger (with oven chips)
Making it was incredibly easy. All I did was put chickpeas, garlic, chilli, paprika, coriander and flour into a blenders, shaped it into a patty then fried for a few minutes. I'm especially proud because this was my first attempt, and made a perfect falafel, whereas my vegan housemate still hasn't mastered it

To do decent homemade chips, you need a fryer - something I don't have.
