Yep, the staff team are always happy when people use chest mounted ones because they they don't have to tell you that you can't record lolI saw all the rides of Paultons Park that on ride filming is permitted via chest mount GoPro. So would I be able record myself on the George's Dinosaur Adventure using my GoPro chest mount and GoPro Hero 9 camera?

As @Mhoowee previously said in their reply to you, yes, as long as that's also what their terms say.on ride filming is permitted via chest mount GoPro only. Does mean that I could use the gopro hero 9 on all the rides at paultons park if have an gopro chest mount attached to my chest.

If you are going to be filming at the park, there are some general considerations you ought to make around the privacy of other guests. It is sensible to be mindful. Many people wouldn't feel comfortable with you filming around the children's splash pad, for example.
I would contact and check with the park to see if they have any guidance, or best practice, on filming that particular attraction and area. Especially if there are other people's children around.
