How has it kinda done its job if I didn't pay it and I drank the product its introduction was specifically designed to deter?Why not suck it up and pay the tax instead? 20p is obviously enough for you to have a made a conscious decision that you’re going to game the system so the tax has kinda done its job.

I thought PepsiCo drinks had LESS sugar in but added salt to encourage you to drink more?Although I agree with the spirit of your argument, you’re at the mercy of whatever they choose to sell. They’re already choosing that you drink Coca Cola products (over PepsiCo which have more sugar in them). They’re already deciding which subset of Coca Cola products you drink too - no Lemon Fanta :-(

I believe it's the other way around. Pepsi has 11g of sugar per 100ml and Coke has 10.6g per 100ml. Coke contains more sodium.
